These Sweet and Spicy Grilled Chicken and Pineapple Skewers combine tender, juicy chicken with caramelized pineapple for the ultimate summer grilling dish.   • 1 ½ lbs (680g) boneless, skinless chicken breasts or thighs, cut into 1-inch cubes
  • 2 cups fresh pineapple chunks
  • 2 bell peppers, cut into 1-inch pieces (red, yellow, or green)
  • 1 red onion, cut into chunks
  • 810 wooden or metal skewers (soaked in water for 30 minutes if wooden)

For the Sweet & Spicy Marinade:

  • ⅓ cup honey
  • 3 tablespoons soy sauce
  • 2 tablespoons olive oil
  • 1 tablespoon sriracha (adjust for desired heat level)
  • 2 cloves garlic, minced
  • 1 teaspoon grated fresh ginger (optional)
  • 1 tablespoon lime juice
  • ½ teaspoon black pepper

For Garnish:

  • Fresh cilantro, chopped
  • Lime wedges

Instructions

  1. Prepare the Marinade:

    • In a small bowl, whisk together honey, soy sauce, olive oil, sriracha, garlic, ginger, lime juice, and black pepper until well combined.
  2. Marinate the Chicken:

    • Place the chicken cubes in a large resealable bag or bowl. Pour half of the marinade over the chicken, reserving the rest for basting.
    • Seal and refrigerate for at least 30 minutes (up to 4 hours for more flavor).
  3. Assemble the Skewers:

    • Thread the marinated chicken, pineapple chunks, bell peppers, and onion onto the skewers, alternating for a colorful look.
  4. Grill the Skewers:

    • Preheat the grill to medium-high heat. Oil the grates to prevent sticking.
    • Grill the skewers for 10-12 minutes, turning occasionally, and baste with the reserved marinade. Cook until the chicken is fully cooked (internal temperature of 165°F/74°C) and the pineapple is caramelized.
  5. Serve:

    • Remove from the grill and garnish with fresh cilantro and lime wedges. Serve hot.

Notes

  • Use canned pineapple chunks if fresh isn’t available, but fresh gives a better caramelized flavor.
  • For an oven version, broil the skewers on high for 10-12 minutes, turning halfway through.
  • Add a pinch of red pepper flakes for extra heat.
