1 1/2 pounds boneless, skinless chicken thighs or breasts, cut into bite-sized pieces
1/2 cup cornstarch
2 eggs, beaten
1/2 cup all-purpose flour
Salt and pepper to taste
Vegetable oil for frying
1/2 cup sweet chili sauce
2 tablespoons soy sauce
1 tablespoon rice vinegar
1 tablespoon honey
2 cloves garlic, minced
Green onions and sesame seeds for garnish
Instructions
Season the chicken pieces with salt and pepper.
Set up a breading station: place cornstarch in one bowl, beaten eggs in another, and flour in a third.
Dredge each chicken piece first in cornstarch, then dip into the egg, and finally coat with flour.
Heat vegetable oil in a large skillet or wok over medium-high heat.
Fry the chicken pieces in batches until golden and crispy, about 5-7 minutes per batch. Drain on paper towels.
