This Sweet Pepper and Sausage Pasta is a quick and comforting meal that’s full of bold flavor. Juicy sausage, colorful sweet peppers, and tender pasta come together in a light tomato sauce for a weeknight dinner the whole family will love.
12 oz pasta (penne or rigatoni works great)
1 tablespoon olive oil
1 lb Italian sausage (mild or spicy, casing removed)
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1 orange bell pepper, sliced
1 small onion, thinly sliced
3 cloves garlic, minced
1 (14.5 oz) can diced tomatoes
1/4 teaspoon red pepper flakes (optional)
Salt and black pepper, to taste
1/4 cup grated Parmesan cheese
Fresh basil or parsley, for garnish (optional)
Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Drain and set aside.
In a large skillet, heat olive oil over medium heat. Add the sausage and cook, breaking it up with a spoon, until browned and cooked through, about 6–8 minutes.
Add the sliced peppers and onion to the skillet. Cook until softened, about 5 minutes.
Stir in the garlic and cook for 1 minute, until fragrant.
Add the diced tomatoes and red pepper flakes (if using). Simmer for 5–7 minutes, letting the flavors combine.
Season with salt and black pepper to taste.
Add the cooked pasta to the skillet and toss to combine everything evenly.
Sprinkle with Parmesan cheese and garnish with fresh herbs if desired. Serve warm.
