These Sweet & Spicy Ramen Noodles combine the perfect balance of heat, sweetness, and umami. Tossed in a quick homemade sauce, this dish is a flavorful upgrade from basic instant ramen and works as a satisfying meal or side dish.

  • 3 tablespoons soy sauce (or tamari for gluten-free)
  • 1 ½ tablespoons honey (or brown sugar for a deeper flavor)
  • 1 tablespoon sriracha (adjust for spice level)
  • 1 teaspoon chili flakes (optional, for extra heat)
  • 1 teaspoon rice vinegar (or lime juice)
  • 1 teaspoon sesame oil
  • 1 teaspoon garlic, minced
  • ½ teaspoon ginger, minced

For the Noodles:

  • 1 package instant ramen noodles (discard seasoning packet)
  • 1 tablespoon butter or oil
  • ½ cup shredded carrots (optional, for crunch)
  • ½ cup chopped green onions
  • 1 egg, scrambled (optional, for protein)
  • 1 tablespoon sesame seeds (for garnish)

Instructions

  1. Cook the noodles:

    • Boil ramen noodles according to package instructions (about 2-3 minutes).
    • Drain and set aside.
  2. Make the sauce:

    • In a small bowl, whisk together soy sauce, honey, sriracha, chili flakes, rice vinegar, sesame oil, garlic, and ginger.
  3. Sauté the veggies & egg (if using):

    • Heat butter or oil in a pan over medium heat.
    • Add carrots and green onions, sautéing for 1-2 minutes.
    • If adding an egg, push veggies to the side and scramble the egg in the pan.
  4. Toss everything together:

    • Add the cooked noodles to the pan.
    • Pour in the sweet & spicy sauce and toss until evenly coated.
  5. Serve & garnish:

    • Sprinkle with sesame seeds and extra green onions.
    • Enjoy warm!
