Taco Bake Casserole is a hearty, family-friendly dish layered with seasoned ground beef, tortillas, cheese, and salsa. Baked to bubbly perfection, it’s an easy and satisfying twist on traditional tacos.

Ingredients

  • 1 lb ground beef
  • 1 small onion, diced
  • 1 packet taco seasoning
  • 2/3 cup water
  • 1 (10 oz) can diced tomatoes with green chilies, drained
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 2 cups shredded cheddar cheese
  • 6 small flour tortillas, cut in halves or quarters
  • 1 cup salsa
  • Cooking spray or oil for greasing the dish
  • Fresh cilantro and sour cream for garnish (optional)

Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
  2. In a skillet over medium heat, cook diced onion until soft, about 2–3 minutes. Add ground beef and cook until browned. Drain any excess fat.
  3. Stir in taco seasoning and water. Simmer for 2–3 minutes.
  4. Add diced tomatoes, black beans, and corn. Stir to combine and cook for another 2–3 minutes.
  5. Layer the baking dish with half of the tortilla pieces, then top with half of the meat mixture and half of the cheese.
  6. Repeat with remaining tortillas, meat mixture, and cheese. Pour salsa evenly over the top.
  7. Cover with foil and bake for 20 minutes. Remove foil and bake for another 10 minutes until cheese is bubbly and golden.
  8. Let cool slightly before serving. Garnish with cilantro and sour cream if desired.

Notes

  • Use ground turkey for a leaner version.
  • Swap flour tortillas with corn tortillas for a gluten-free option.
  • Add jalapeños for extra spice.
