This Taco Bell Chicken Quesadilla Copycat recipe recreates the cheesy, spicy, and creamy quesadilla at home, with grilled chicken, melty cheese, and a flavorful jalapeño sauce, all toasted to perfection in a flour tortilla.

  • 2 cups cooked and shredded chicken breast
  • 4 large flour tortillas
  • 2 cups shredded Mexican blend cheese
  • 2 tbsp butter (for grilling)
  • 1/4 cup mayonnaise
  • 2 tsp pickled jalapeño juice
  • 2 tsp minced pickled jalapeños
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/4 tsp cumin
  • 1/4 tsp paprika
  • Salt to taste

Instructions

  1. In a small bowl, mix mayonnaise, jalapeño juice, minced jalapeños, garlic powder, onion powder, cumin, paprika, and a pinch of salt to make the quesadilla sauce.
  2. Spread about 1 tablespoon of the sauce on half of each tortilla.
  3. Layer with shredded chicken and cheese over the sauce.
  4. Fold tortillas in half to cover the filling.
  5. Heat butter in a skillet over medium heat. Grill each quesadilla for 2–3 minutes per side, or until golden and the cheese is melted.
  6. Slice and serve hot with extra sauce if desired.

Notes

  • Use rotisserie chicken for convenience.
  • Add more jalapeños for extra heat.
  • Quesadillas can be frozen and reheated in a toaster oven.
