The Quesarito is Taco Bell’s indulgent mash-up of a quesadilla and a burrito. It features seasoned beef, warm nacho cheese, seasoned rice, and tangy chipotle sauce wrapped in a layer of melted cheese sandwiched between two tortillas. Here’s how to recreate it at home!

For the Quesarito:

  • 2 large flour tortillas
  • 1 cup shredded Mexican cheese blend (or cheddar and Monterey Jack)
  • 1 cup seasoned taco beef (store-bought seasoning or homemade, see below)
  • 1/2 cup cooked seasoned rice (see instructions)
  • 1/4 cup nacho cheese sauce (store-bought or homemade)
  • 1/4 cup sour cream
  • 2 tbsp chipotle sauce (store-bought or homemade, see below)

For the Seasoned Rice:

  • 1 cup cooked white rice
  • 1/2 tsp chili powder
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/4 tsp cumin
  • Salt, to taste

For Homemade Taco Seasoning (Optional):

  • 1 tbsp chili powder
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp smoked paprika
  • 1/4 tsp cumin
  • 1/4 tsp oregano
  • Salt and pepper, to taste

For Homemade Chipotle Sauce (Optional):

  • 1/4 cup mayonnaise
  • 1 tbsp sour cream
  • 1 tsp adobo sauce (from canned chipotle peppers)
  • 1/4 tsp smoked paprika
  • 1/4 tsp garlic powder

Instructions

1. Prepare the Fillings:

  1. Seasoned Beef: Cook ground beef in a skillet over medium heat. Add taco seasoning and a splash of water. Cook until thickened.
  2. Seasoned Rice: Mix the cooked rice with chili powder, garlic powder, onion powder, cumin, and salt. Adjust seasoning to taste.
  3. Chipotle Sauce (if making): Whisk together all ingredients in a small bowl until smooth.

2. Assemble the Quesarito:

  1. Heat one tortilla on a dry skillet over medium heat. Sprinkle the shredded cheese evenly across the surface.
  2. Top with the second tortilla, pressing gently. Cook for 1-2 minutes until the cheese melts and binds the tortillas together. Flip and cook the other side for 1 minute.

3. Add the Fillings:

  1. Spread nacho cheese sauce in the center of the top tortilla.
  2. Layer the seasoned beef, seasoned rice, a drizzle of chipotle sauce, and a dollop of sour cream.

4. Roll the Quesarito:

  1. Fold the sides of the tortilla inward, then roll it tightly into a burrito shape.
  2. Place the rolled Quesarito seam-side down on the skillet for 1-2 minutes to seal the edges and warm through.

5. Serve:

  • Slice the Quesarito in half and serve warm with extra chipotle sauce or salsa on the side.

  • Vegetarian Option: Substitute beef with seasoned black beans or plant-based ground meat.
  • Make Ahead: Prepare the seasoned beef, rice, and sauces in advance. Assemble and heat just before serving.
