  • 1 ½ cups shredded Mexican cheese blend (cheddar + Monterey Jack)
  • 2 tablespoons taco seasoning (store-bought or homemade)
  • ½ cup sour cream
  • ½ cup diced green onions
  • ½ cup diced red bell pepper (or jalapeños for spice)
  • 1 teaspoon garlic powder
  • 1 teaspoon lime juice

Coating & Toppings

  • 1 cup crushed nacho-flavored tortilla chips (like Doritos)
  • ¼ cup chopped fresh cilantro
  • ¼ cup cooked and crumbled bacon (optional)
  • Extra diced green onions for garnish


Instructions

  1. Mix the cheese ball:

    • In a large bowl, combine softened cream cheese, shredded cheese, taco seasoning, sour cream, green onions, bell pepper (or jalapeños), garlic powder, and lime juice.
    • Stir until well combined.
  2. Shape & chill:

    • Transfer the mixture to a sheet of plastic wrap and form it into a ball.
    • Wrap tightly and refrigerate for at least 2 hours (or overnight) to firm up.
  3. Prepare the coating:

    • In a shallow dish, mix crushed nacho chips, chopped cilantro, and bacon (if using).
  4. Coat the cheese ball:

    • Unwrap the chilled cheese ball and roll it in the coating mixture until fully covered.
    • Press gently to make sure the toppings stick.
  5. Serve & enjoy:

    • Place on a serving platter and garnish with extra green onions.
    • Serve with tortilla chips, crackers, or sliced veggies.
