These Homemade Taquitos are crispy, golden tortillas stuffed with a flavorful filling of your choice, from shredded chicken to beef or beans. Perfect as a snack, appetizer, or main dish, they’re easy to make and deliciously versatile!

For the Filling:

  • 2 cups cooked shredded chicken, beef, or beans
  • 1/2 cup shredded cheese (cheddar, Monterey Jack, or a blend)
  • 1/4 cup salsa or enchilada sauce
  • 1 tsp chili powder
  • 1/2 tsp ground cumin
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt and pepper, to taste

For the Taquitos:

  • 12 small corn tortillas
  • 1/4 cup vegetable oil (for brushing or frying)

Optional Toppings and Sides:

  • Guacamole
  • Sour cream
  • Salsa
  • Shredded lettuce
  • Diced tomatoes
  • Chopped cilantro

Instructions

1. Prepare the Filling:

  1. In a large bowl, combine the shredded chicken (or beef/beans), cheese, salsa, and seasonings. Mix well to evenly coat the filling with the flavors.

2. Soften the Tortillas:

  1. To prevent cracking, warm the tortillas:
    • Microwave: Stack tortillas between damp paper towels and heat for 30-45 seconds.
    • Stovetop: Warm each tortilla in a dry skillet for 10-15 seconds per side.

3. Assemble the Taquitos:

  1. Spoon 2-3 tablespoons of the filling onto the lower third of a tortilla. Roll tightly and secure with a toothpick if necessary. Repeat with remaining tortillas and filling.

4. Cook the Taquitos:

Oven-Baked Method:

  1. Preheat your oven to 425°F (220°C).
  2. Place the rolled taquitos seam-side down on a baking sheet lined with parchment paper. Brush lightly with vegetable oil.
  3. Bake for 15-20 minutes, or until the taquitos are crispy and golden.

Fried Method:

  1. Heat 1/4 inch of vegetable oil in a skillet over medium heat.
  2. Fry the taquitos seam-side down for 1-2 minutes per side, or until golden brown and crispy. Drain on paper towels.

5. Serve:

  1. Arrange the taquitos on a platter and serve with guacamole, sour cream, and salsa. Garnish with shredded lettuce, diced tomatoes, or chopped cilantro if desired.

Notes

  • Make Ahead: Assemble the taquitos and freeze them before baking or frying. Bake straight from frozen, adding a few extra minutes to the cooking time.
  • Filling Variations: Use ground beef, refried beans, or shredded pork for a twist. Add diced green chilies or jalapeños for extra spice.
  • Tortilla Type: Corn tortillas work best, but small flour tortillas can also be used for a softer texture.
