  • 4 large eggs
  • 2 tbsp milk or cream
  • Salt and pepper to taste
  • 1 tbsp unsalted butter

Additional Toppings:

  • 1 cup shredded cheddar cheese
  • 2 green onions, chopped (optional)
  • Hot sauce (optional)

Instructions

Prepare the Tater Tots:

  1. Bake the Tater Tots:
    • Preheat your oven and bake the tater tots according to package instructions until golden and crispy. Sprinkle with salt, if desired.

Make the Sausage Gravy:

  • In a skillet over medium heat, cook the sausage until browned and crumbled. Remove the cooked sausage with a slotted spoon, leaving the grease in the pan.

    • Add the butter to the skillet. Once melted, stir in the flour and cook for 1–2 minutes, whisking constantly, to form a roux.
  2. Add the Milk:
    • Gradually whisk in the milk, cooking until the gravy thickens. Stir in the cooked sausage and season with black pepper and salt. Keep warm.

Cook the Eggs:

  • In a bowl, whisk together the eggs, milk or cream, and a pinch of salt and pepper.
  • Melt butter in a nonstick skillet over medium heat. Add the eggs and cook gently, stirring frequently, until fluffy and just set.

Assemble the Bowls:

  • Divide the crispy tater tots among bowls. Top with scrambled eggs, a generous scoop of sausage gravy, and shredded cheddar cheese.
