Tater Tot Casserole is a comforting, all-in-one dish made with ground beef, creamy mushroom sauce, vegetables, and crispy tater tots baked to golden perfection. It’s a family favorite perfect for weeknight dinners.

Ingredients

  • 1 lb ground beef
  • 1 small onion, diced
  • 1 clove garlic, minced
  • 1 can (10.5 oz) cream of mushroom soup
  • 1/2 cup sour cream
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 cups frozen mixed vegetables (peas, carrots, corn, etc.)
  • 2 cups shredded cheddar cheese
  • 1 bag (32 oz) frozen tater tots
  • Cooking spray or butter for greasing dish

Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
  2. In a skillet over medium heat, cook ground beef and onion until beef is browned and onion is soft. Add garlic and cook for 1 minute more.
  3. Drain any excess grease, then stir in cream of mushroom soup, sour cream, salt, and pepper. Mix until well combined.
  4. Stir in the frozen vegetables and 1 cup of cheddar cheese. Spread the mixture evenly in the prepared baking dish.
  5. Arrange tater tots in a single layer on top of the beef mixture.
  6. Bake uncovered for 35–40 minutes, or until the tater tots are golden and crispy.
  7. Sprinkle remaining 1 cup of cheese over the top and return to oven for 5 more minutes, until cheese is melted.
  8. Let rest for 5 minutes before serving.

Notes

  • Substitute ground turkey or chicken for a lighter version.
  • Add a layer of cooked bacon bits for extra flavor.
  • This dish can be assembled ahead and refrigerated until ready to bake.
