This breakfast casserole layers crispy tater tots with savory sausage, fluffy eggs, and gooey cheese for a satisfying dish that’s easy to prepare and perfect for gatherings or meal prep.

  • 1 lb (450 g) breakfast sausage (pork or turkey)
  • 1 medium onion, finely chopped (optional)
  • 8 large eggs
  • 1/2 cup (120 ml) milk
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt (adjust to taste)
  • 1/4 teaspoon black pepper
  • 2 cups (200 g) shredded cheddar cheese (or your favorite cheese)
  • 1 bag (32 oz) frozen tater tots

Optional garnish:

  • Chopped green onions
  • Fresh parsley

Instructions

  1. Preheat the oven:
    • Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish with non-stick spray or butter.
  2. Cook the sausage:
    • In a large skillet over medium heat, cook the sausage and onion (if using) until the sausage is browned and crumbled. Drain any excess grease and set aside.
  3. Prepare the egg mixture:
    • In a large bowl, whisk together the eggs, milk, garlic powder, onion powder, salt, and pepper until well combined.
  4. Assemble the casserole:
    • Spread the cooked sausage evenly over the bottom of the prepared baking dish. Sprinkle 1 1/2 cups of shredded cheese over the sausage. Pour the egg mixture evenly over the cheese. Arrange the frozen tater tots in a single layer on top of the egg mixture.
  5. Bake:
    • Place the casserole in the preheated oven and bake uncovered for 35-40 minutes, or until the eggs are set and the tater tots are golden brown.
  6. Add the final cheese:
    • Sprinkle the remaining 1/2 cup of cheese over the top and bake for an additional 5 minutes, or until the cheese is melted.
  7. Serve:
    • Remove the casserole from the oven and let it cool for 5 minutes. Garnish with green onions or parsley, if desired, and serve warm.

  • Make-ahead: Assemble the casserole the night before, cover, and refrigerate. Bake the next morning, adding 10 minutes to the cooking time.
