1.5 lbs boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
1 tbsp vegetable oil
1 red bell pepper, sliced
1/2 cup sliced carrots
2 cloves garlic, minced
1/2 cup creamy peanut butter
1/4 cup soy sauce
1/4 cup water
2 tbsp rice vinegar
2 tbsp honey
1 tbsp lime juice
1 tsp grated fresh ginger
1/4 tsp red pepper flakes (optional)
Chopped peanuts and fresh cilantro for garnish
Cooked rice or noodles, for serving
Instructions
In a large skillet or wok, heat vegetable oil over medium-high heat.
Add chicken pieces and cook until browned and cooked through, about 6–8 minutes. Remove and set aside.
In the same pan, add bell pepper, carrots, and garlic. Sauté for 3–4 minutes until slightly softened.
In a bowl, whisk together peanut butter, soy sauce, water, rice vinegar, honey, lime juice, ginger, and red pepper flakes until smooth.
Return chicken to the pan and pour the peanut sauce over the top. Stir well to coat everything evenly.
Simmer for 5–7 minutes, stirring occasionally, until sauce thickens and vegetables are tender.
Serve hot over cooked rice or noodles, and garnish with chopped peanuts and fresh cilantro.
Notes
Use natural peanut butter for a more authentic flavor and smoother texture.
Adjust spice level with more or less red pepper flakes.
This dish pairs well with jasmine rice or rice noodles.
