Crispy, golden bread with perfectly melted cheese—this Grilled Cheese Sandwich is the definition of comfort food. It’s buttery on the outside, gooey on the inside, and incredibly easy to customize with your favorite cheeses and add-ins. Perfect for lunch, a quick dinner, or paired with tomato soup for a classic combo!

Ingredients

Scale
  • 2 slices of thick-cut bread (sourdough, brioche, or white bread work best)
  • 2 tablespoons unsalted butter, softened (or mayo for an extra crispy crust)
  • 1 cup shredded cheese or 2-3 slices (mix of cheeses recommended)

Best Cheese Combos:

  • Classic: Sharp cheddar + mozzarella
  • Gourmet: Gruyère + fontina + parmesan
  • Spicy: Pepper jack + cheddar + a sprinkle of red pepper flakes

Instructions

1. Butter the bread:

  • Spread softened butter evenly on one side of each bread slice (or mayo for extra crispiness).
  • Place the buttered sides down on a plate or cutting board.

2. Add the cheese:

  • Layer your chosen cheese(s) evenly on the non-buttered side of one slice of bread.
  • Place the second slice on top, buttered side facing out.

3. Cook the sandwich:

  • Heat a non-stick skillet over medium-low heat (this ensures even melting without burning the bread).
  • Place the sandwich in the pan and cook for 3-4 minutes per side until golden brown and the cheese is melted. Press gently with a spatula for an even crust.

4. Serve:

  • Remove from the pan, let cool for 1 minute, then slice and enjoy!

Notes

  • Low and slow is key: Cooking over low heat prevents the bread from burning before the cheese melts.
  • Add-ins: Try caramelized onions, crispy bacon, or fresh tomato slices for extra flavor.
  • Crispy crust hack: Add a sprinkle of grated parmesan on the buttered side of the bread before grilling for an extra-crispy finish.
