This Tomato Cucumber Mozzarella Salad is a light and refreshing side that’s ready in minutes. Juicy tomatoes, crisp cucumbers, and creamy mozzarella are tossed with olive oil, balsamic vinegar, and fresh basil. It’s perfect for summer meals, BBQs, or whenever you want something simple and delicious!

Ingredients

  • 1 pint cherry or grape tomatoes, halved

  • 1 large cucumber, sliced and halved

  • 8 oz fresh mozzarella balls (bocconcini or ciliegine), halved

  • 2 tbsp extra virgin olive oil

  • 1 tbsp balsamic vinegar (or lemon juice)

  • Salt and pepper, to taste

  • ¼ cup fresh basil, chopped or torn

Instructions

  1. In a large bowl, combine the halved tomatoes, cucumber slices, and mozzarella.

  2. Drizzle with olive oil and balsamic vinegar.

  3. Season with salt and pepper.

  4. Gently toss to combine.

  5. Sprinkle with fresh basil just before serving.

 


Notes

  • For extra flavor, let the salad sit for 10–15 minutes before serving.

  • You can substitute mozzarella balls with diced mozzarella or even feta for a twist.

  • Great served chilled or at room temperature.
