This Tomato Garlic Salad is fresh, vibrant, and bursting with flavor! Made with juicy tomatoes, garlic, and a simple vinaigrette, it’s perfect as a side dish, appetizer, or light summer salad.

Ingredients

  • 4 ripe tomatoes, chopped (Roma, cherry, or heirloom)
  • 2 cloves garlic, minced
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon balsamic vinegar (or lemon juice for brightness)
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon dried oregano or Italian seasoning
  • ¼ cup fresh basil or parsley, chopped

Optional Add-Ins:

  • ¼ cup crumbled feta or mozzarella pearls
  • ¼ teaspoon red pepper flakes (for a little heat)
  • 1 tablespoon toasted pine nuts or sunflower seeds

Instructions

1️⃣ Prepare the Tomatoes

  • Chop tomatoes into bite-sized pieces and place them in a bowl.
