This Tomato Salad is juicy, vibrant, and full of flavor. Made with ripe tomatoes, red onion, fresh herbs, and a simple olive oil dressing, it’s a refreshing side dish that comes together in minutes. Perfect with grilled meats, sandwiches, or crusty bread.

Ingredients

Scale
  • 45 ripe tomatoes (any variety), cut into wedges or thick slices

  • 1/4 red onion, thinly sliced

  • 2 tablespoons extra virgin olive oil

  • 1 tablespoon red wine vinegar or balsamic vinegar

  • 1 garlic clove, minced (optional)

  • Salt and black pepper, to taste

  • 1/4 cup fresh basil leaves, torn (or use parsley if preferred)

  • Optional: Crumbled feta, mozzarella balls, or sliced avocado for extra richness

Instructions

  1. Prep the veggies: Slice the tomatoes and red onion and place them in a large bowl.

  2. Make the dressing: In a small bowl, whisk together olive oil, vinegar, garlic (if using), salt, and pepper.

  3. Toss and serve: Pour the dressing over the tomatoes and onions. Gently toss to combine.

  4. Add herbs: Sprinkle fresh basil over the top just before serving.

  5. Chill or serve immediately: Best enjoyed fresh, but can be chilled for 10–15 minutes before serving.

Notes

  • Use heirloom tomatoes for extra color and flavor variety.

  • For a heartier salad, add chunks of crusty bread (to make a panzanella-style salad).

  • If your tomatoes are super juicy, you can strain a bit of liquid before adding dressing.
