8 oz pasta (spaghetti or linguine)
1 lb shrimp, peeled and deveined
2 tbsp olive oil
4 cloves garlic, minced
1/2 tsp red pepper flakes (optional)
1 pint cherry tomatoes, halved
3 cups fresh spinach
1/4 cup grated Parmesan cheese
Salt and black pepper to taste
1 tbsp lemon juice
Instructions
Cook the pasta according to package instructions. Drain and set aside.
In a large skillet, heat olive oil over medium heat. Add garlic and red pepper flakes; sauté for 1 minute.
Add shrimp to the skillet, season with salt and pepper, and cook for 2–3 minutes per side or until pink and cooked through. Remove shrimp and set aside.
In the same skillet, add cherry tomatoes and cook for 3–4 minutes until they begin to soften.
Add spinach and cook until wilted, about 2 minutes.
Return shrimp to the skillet. Add cooked pasta, Parmesan cheese, and lemon juice. Toss everything to combine.
Cook for another 1–2 minutes until heated through. Adjust seasoning as needed.
Serve warm, optionally garnished with extra Parmesan.
Notes
You can substitute shrimp with chicken or tofu for variation.
Use whole wheat pasta for a healthier version.
Add a splash of white wine for extra depth of flavor.
