Ingredients

Scale
  • 2 cups turkey drippings (or turkey broth)
  • 4 tbsp unsalted butter
  • ¼ cup all-purpose flour
  • ½ tsp salt (adjust to taste)
  • ¼ tsp black pepper
  • ½ tsp garlic powder (optional)
  • ½ tsp onion powder (optional)
  • ½ tsp fresh or dried thyme (optional)

Instructions

Step 1: Collect the Drippings

  1. After roasting your turkey, pour the drippings from the pan into a measuring cup. Let it sit for a few minutes, then skim off excess fat from the top.
  2. If you don’t have enough drippings, add turkey broth to make 2 cups of liquid.

Step 2: Make the Roux

  1. In a medium saucepan over medium heat, melt 4 tbsp of butter.
  2. Whisk in ¼ cup of flour and cook for 1–2 minutes, stirring constantly, until golden brown.

Step 3: Add the Broth & Seasonings

  1. Slowly pour in the turkey drippings (or broth), whisking continuously to prevent lumps.
  2. Add salt, pepper, garlic powder, onion powder, and thyme (if using).
  3. Simmer for 5–7 minutes, stirring frequently, until thickened.

Step 4: Adjust & Serve

  1. Taste and adjust seasoning if needed. If the gravy is too thick, add a little more broth to reach your desired consistency.
  2. Remove from heat and serve warm over turkey, mashed potatoes, or stuffing.
