Turkey Taco Stuffed Sweet Potatoes are a nutritious and flavorful twist on taco night, featuring roasted sweet potatoes filled with seasoned ground turkey, black beans, and classic taco toppings. A perfect gluten-free and healthy dinner option.

  • 4 medium sweet potatoes
  • 1 lb ground turkey
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1/2 tsp paprika
  • 1/2 tsp oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup canned black beans, drained and rinsed
  • 1/2 cup corn (optional)
  • 1/2 cup salsa
  • 1/2 cup shredded cheddar cheese (optional)
  • Fresh cilantro, avocado, sour cream, or lime wedges for topping

Instructions

  1. Preheat oven to 400°F (200°C). Pierce sweet potatoes with a fork and place on a baking sheet.
  2. Bake for 45-50 minutes, or until tender.
  3. While sweet potatoes bake, heat olive oil in a skillet over medium heat. Add onion and cook until softened.
  4. Add garlic and ground turkey. Cook until browned and cooked through.
  5. Stir in chili powder, cumin, paprika, oregano, salt, and pepper. Cook for 1-2 minutes.
  6. Add black beans, corn (if using), and salsa. Cook for another 3-4 minutes, then remove from heat.
  7. Once sweet potatoes are cool enough to handle, slice them open lengthwise and fluff the inside with a fork.
  8. Spoon the turkey mixture into each sweet potato. Top with cheese, if using, and return to oven for 5 minutes to melt.
  9. Garnish with cilantro, avocado, sour cream, or lime wedges before serving.
