Turkish Simit is a traditional sesame-crusted bread ring, similar to a bagel but with a lighter, crunchier texture. Popular as a street food or breakfast item, often enjoyed with tea, cheese, and olives.

Ingredients

  • 4 cups all-purpose flour
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 1 tablespoon instant yeast
  • 1 1/4 cups warm water
  • 1/4 cup olive oil
  • 1/2 cup molasses (grape or pomegranate preferred)
  • 1/2 cup water (for molasses mixture)
  • 1 cup sesame seeds, toasted

Instructions

  1. In a large bowl, mix flour, sugar, salt, and instant yeast.
  2. Add warm water and olive oil, knead until a smooth dough forms (about 8–10 minutes).
  3. Cover and let the dough rise in a warm place for 1 hour or until doubled in size.
  4. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  5. Divide the dough into 8 equal pieces. Roll each into a long rope, then twist two ropes together and form into a ring, pinching ends to seal.
  6. In a shallow bowl, mix molasses and 1/2 cup water. Dip each ring into the molasses mixture, then into the sesame seeds, coating well.
  7. Place rings on the prepared baking sheet and let rest for 15 minutes.
  8. Bake for 20–25 minutes or until golden brown and crispy on the outside.
  9. Cool slightly before serving.

Notes

  • For extra crunch, toast sesame seeds before coating.
  • Simit is best enjoyed fresh but can be stored in an airtight container for up to 2 days.
  • Great served with cheese, olives, and tea for a traditional Turkish breakfast.
