Turtle Candy is a classic treat made with toasted pecans, gooey caramel, and rich chocolate. These bite-sized confections are simple to make and perfect for gifting or indulging during the holidays!

  • 2 cups pecan halves, toasted
  • 20 soft caramels (about 7 oz)
  • 2 tablespoons heavy cream
  • 1 cup semi-sweet or milk chocolate chips
  • 1 teaspoon coconut oil or vegetable oil (optional, for a glossy finish)

Instructions

  1. Toast the Pecans:
    • Preheat your oven to 350°F (175°C). Spread the pecan halves on a baking sheet in a single layer and toast for 6–8 minutes, or until fragrant. Let cool.
  2. Prepare the Caramel:
    • In a microwave-safe bowl, combine the soft caramels and heavy cream. Microwave in 30-second intervals, stirring after each, until smooth and melted.
  3. Assemble the Turtle Base:
    • Line a baking sheet with parchment paper or a silicone baking mat. Arrange the toasted pecan halves in clusters of 3–4 pieces (about 20 clusters).
    • Spoon about 1 teaspoon of melted caramel onto the center of each pecan cluster, ensuring the pecans are partially covered. Let the caramel set slightly.
  4. Melt the Chocolate:
    • In a microwave-safe bowl, melt the chocolate chips in 30-second intervals, stirring after each, until smooth. Stir in the coconut oil, if using, for a glossy finish.
  5. Top with Chocolate:
    • Spoon or drizzle melted chocolate over each caramel-covered pecan cluster, covering the caramel completely.
  6. Set and Serve:
    • Allow the turtles to set at room temperature or refrigerate for 15–20 minutes until the chocolate hardens. Transfer to an airtight container for storage.

Notes

  • Store in an airtight container at room temperature for up to 1 week or in the refrigerator for up to 2 weeks.
  • Use dark chocolate for a richer, less sweet flavor.
  • For added flair, sprinkle a pinch of sea salt over the chocolate before it sets.
