Tuscan Artichoke Tomato Salad is a rustic and flavorful Italian-inspired salad featuring marinated artichoke hearts, juicy tomatoes, fresh herbs, and a simple olive oil vinaigrette. A refreshing side dish perfect for summer meals or antipasto platters.

Ingredients

  • 1 (14 oz) can or jar marinated artichoke hearts, drained and quartered
  • 1 cup cherry or grape tomatoes, halved
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup fresh basil leaves, chopped
  • 2 tablespoons olive oil
  • 1 tablespoon red wine vinegar or lemon juice
  • Salt and black pepper to taste
  • Optional: shaved Parmesan cheese for garnish

Instructions

  1. In a large bowl, combine the artichoke hearts, tomatoes, red onion, and basil.
  2. In a small bowl, whisk together olive oil, red wine vinegar or lemon juice, salt, and pepper.
  3. Pour the dressing over the salad and toss gently to combine.
  4. Let sit for 10–15 minutes to allow flavors to meld. Garnish with shaved Parmesan if desired and serve.

Notes

  • Great served chilled or at room temperature.
  • Add kalamata olives or roasted red peppers for more flavor depth.
  • This salad pairs well with grilled chicken, fish, or crusty bread.
