Tzatziki Gyro Rice Bowls are a wholesome and flavorful twist on classic gyros, featuring tender seasoned meat, fresh vegetables, and creamy homemade tzatziki all served over a bed of fluffy rice for a satisfying and easy-to-make meal.

Ingredients

  • 1 lb ground lamb or beef (or a mix)
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp ground cumin
  • 1/2 tsp ground coriander
  • 1/2 tsp paprika
  • Salt and pepper, to taste
  • 1 tbsp olive oil
  • 2 cups cooked white or brown rice
  • 1/2 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/4 red onion, thinly sliced
  • 1/4 cup crumbled feta cheese
  • Fresh parsley or dill, for garnish
  • For the Tzatziki:
  • 1 cup Greek yogurt
  • 1/2 cup cucumber, grated and drained
  • 1 clove garlic, minced
  • 1 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp chopped fresh dill
  • Salt and pepper, to taste

Instructions

  1. In a skillet over medium heat, add olive oil. Cook ground lamb or beef with garlic, oregano, cumin, coriander, paprika, salt, and pepper until browned and fully cooked. Set aside.
  2. In a bowl, mix Greek yogurt, grated cucumber, garlic, olive oil, lemon juice, dill, salt, and pepper to make the tzatziki. Chill until ready to use.
  3. Divide cooked rice among bowls. Top with seasoned meat, cherry tomatoes, cucumber, red onion, and feta cheese.
  4. Spoon tzatziki over each bowl and garnish with fresh parsley or dill.
  5. Serve immediately or store components separately for meal prep.

Notes

  • Use ground turkey or chicken for a lighter version.
  • For extra flavor, use leftover grilled gyro meat or shawarma-style slices.
  • To make dairy-free, use a plant-based yogurt for the tzatziki.
  • This dish works well both warm and cold, making it perfect for meal prep.
