Unicorn Cheesecake Bites are vibrant, mini no-bake cheesecakes layered with whimsical colors and topped with sprinkles. Perfect for parties, birthdays, or any time you want a magical, sweet treat.

Ingredients

  • 1 cup graham cracker crumbs
  • 3 tbsp melted butter
  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1/2 tsp vanilla extract
  • 1 cup whipped topping (Cool Whip), thawed
  • Gel food coloring (pink, blue, purple)
  • Sprinkles or edible glitter for garnish

Instructions

  1. In a small bowl, mix graham cracker crumbs and melted butter. Press into the bottoms of a lined mini muffin tin or silicone mold to form the crust. Chill while preparing the filling.
  2. In a mixing bowl, beat cream cheese, powdered sugar, and vanilla until smooth.
  3. Fold in whipped topping until combined and fluffy.
  4. Divide the filling into separate bowls and tint each with a different food coloring.
  5. Spoon small dollops of each color into each crust, swirling gently with a toothpick for a marbled effect.
  6. Top with sprinkles or edible glitter.
  7. Freeze for at least 2 hours until firm.
  8. Remove from molds and serve chilled.

  • Use silicone molds for easy removal and best presentation.
  • Store in an airtight container in the freezer and thaw slightly before serving.
