These Valentine Crinkle Cookies are soft, chewy, and full of sweet vanilla flavor. Made with a cake mix shortcut, they’re rolled in powdered sugar for a beautiful crinkled effect. Perfect for sharing with loved ones on Valentine’s Day!

Ingredients

Scale
  • 1 box (15.25 oz) strawberry or red velvet cake mix
  • ⅓ cup vegetable oil
  • 2 large eggs
  • 1 tsp vanilla extract
  • ½ cup powdered sugar (for rolling)
  • ¼ cup red and pink sprinkles (optional)

Instructions

  • Preheat the oven: Set your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • Make the dough: In a large mixing bowl, combine the cake mix, oil, eggs, and vanilla extract. Stir until a soft dough forms. If the dough is sticky, chill in the refrigerator for 20–30 minutes.
  • Roll the cookies: Scoop tablespoon-sized dough balls and roll them in powdered sugar. Place them on the prepared baking sheet, about 2 inches apart.
  • Bake: Bake for 10–12 minutes, or until the edges are set and the tops have a crackled appearance.
  • Cool and decorate: Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack. If using, sprinkle red and pink sprinkles on top while warm.
  • Serve and enjoy!

Notes

  • For extra Valentine’s flair, drizzle melted white chocolate over the cookies.
  • Store in an airtight container at room temperature for up to 5 days.
  • If you prefer a richer flavor, use red velvet cake mix instead of strawberry.
