Veggie Lo Mein is a quick and flavorful stir-fried noodle dish loaded with colorful vegetables and tossed in a savory sauce. Perfect for a healthy weeknight meal.

Ingredients

  • 8 oz lo mein noodles or spaghetti
  • 1 tablespoon sesame oil
  • 2 tablespoons vegetable oil
  • 2 garlic cloves, minced
  • 1 teaspoon fresh ginger, grated
  • 1 cup shredded carrots
  • 1 cup snow peas
  • 1 red bell pepper, thinly sliced
  • 1 cup broccoli florets
  • 1/4 cup green onions, sliced
  • 1/4 cup low-sodium soy sauce
  • 1 tablespoon oyster sauce (optional)
  • 1 tablespoon hoisin sauce
  • 1 teaspoon sugar
  • 1/2 teaspoon black pepper

Instructions

  1. Cook noodles according to package instructions. Drain and toss with sesame oil. Set aside.
  2. In a large skillet or wok, heat vegetable oil over medium-high heat.
  3. Add garlic and ginger, and sauté for 30 seconds until fragrant.
  4. Add carrots, snow peas, bell pepper, and broccoli. Stir-fry for 4-5 minutes until vegetables are tender-crisp.
  5. In a small bowl, mix soy sauce, oyster sauce (if using), hoisin sauce, sugar, and black pepper.
  6. Add cooked noodles and sauce mixture to the skillet. Toss everything together until well combined and heated through.
  7. Stir in green onions and serve hot.

Notes

  • Use any combination of your favorite vegetables.
  • For a spicier version, add chili garlic sauce or red pepper flakes.
  • Leftovers can be stored in the fridge for up to 3 days.
