These Waffle Cookies are soft, buttery treats made using a waffle iron for a unique texture and shape. Quick to whip up and versatile to flavor, they’re perfect for snacks, dessert, or gifting during the holidays.

  • 3/4 cup (150 g) granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract (or almond extract for variation)
  • 1 1/2 cups (190 g) all-purpose flour
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt

Instructions

  • Preheat the waffle iron:
    • Set your waffle iron to medium heat and allow it to preheat.
  • Make the dough:
    • In a large bowl, cream together the softened butter and sugar until light and fluffy, about 2-3 minutes.
    • Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
    • In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  • Cook the cookies:
    • Lightly grease the waffle iron with non-stick spray or butter. Drop tablespoon-sized portions of dough onto the waffle iron (space them out as they will spread slightly).
    • Close the lid and cook for 1-2 minutes, or until the cookies are golden brown and cooked through. Cooking time may vary based on your waffle iron.
  • Cool and decorate:
    • Remove the cookies from the waffle iron and place them on a wire rack to cool. Dust with powdered sugar or drizzle with melted chocolate for extra sweetness if desired.
  • Serve:
    • Enjoy the cookies warm or at room temperature. Store leftovers in an airtight container for up to 3 days.
