This Walking Taco Casserole has all the bold flavors of classic walking tacos in an easy, baked dish! Layered with seasoned ground beef, crunchy chips, gooey cheese, and your favorite taco toppings, it’s a family-friendly dinner or party favorite.

Ingredients

For the Casserole:
  • 1 lb ground beef (or ground turkey)
  • 1 packet (1 oz) taco seasoning
  • ½ cup water
  • 1 (10-ounce) can Rotel (diced tomatoes with green chilies), drained
  • 1 (15-ounce) can black beans, drained and rinsed (optional)
  • 2 cups crushed tortilla chips (Fritos or Doritos work great!)
  • 2 cups shredded Mexican blend cheese
For Toppings (Optional):

 

  • ½ cup sour cream
  • ½ cup diced tomatoes
  • ½ cup shredded lettuce
  • ¼ cup sliced jalapeños
  • ¼ cup chopped fresh cilantro
  • 1 avocado, diced

Instructions

  • Preheat Oven:

    • Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish.
  • Cook the Beef:

    • In a large skillet, cook ground beef over medium heat until browned (about 5 minutes).
    • Drain excess grease, then stir in taco seasoning, water, Rotel, and black beans (if using).
    • Simmer for 2-3 minutes, then remove from heat.
  • Assemble the Casserole:

    • Spread half of the crushed chips on the bottom of the baking dish.
    • Layer the seasoned beef mixture on top.
    • Sprinkle shredded cheese evenly over the meat.
  • Bake:

    • Bake uncovered for 15 minutes, until the cheese is melted and bubbly.

 

  • Add the Crunch & Serve:

    • Sprinkle the remaining crushed chips on top.
    • Garnish with your favorite toppings and serve warm!

Notes

  • Want extra spice? Add diced jalapeños or use spicy taco seasoning.
  • Swap the meat for shredded chicken or a vegetarian alternative like black beans and corn.

 

  • Great for meal prep! Store leftovers in the fridge for 3-4 days and reheat in the oven or microwave.
