4 cups seedless watermelon, cubed
1 large cucumber, diced
1/4 cup red onion, thinly sliced
1/4 cup fresh mint leaves, chopped
2 tbsp lime juice
1 tbsp olive oil
Salt and pepper to taste
Optional: 1/4 cup feta cheese, crumbled
Instructions
In a large bowl, combine watermelon, cucumber, and red onion.
In a small bowl, whisk together lime juice, olive oil, salt, and pepper.
Pour dressing over the watermelon mixture and toss gently to combine.
Sprinkle chopped mint over the salad and toss again lightly.
If using, top with crumbled feta just before serving.
Serve immediately or chill for up to 2 hours before serving.
Notes
For best flavor, use chilled watermelon and cucumber.
