Watermelon and cucumber salad is a refreshing, hydrating dish perfect for hot weather, combining sweet watermelon, crisp cucumber, and fresh herbs with a tangy lime dressing.

Ingredients

  • 4 cups seedless watermelon, cubed
  • 1 large cucumber, diced
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup fresh mint leaves, chopped
  • 2 tbsp lime juice
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • Optional: 1/4 cup feta cheese, crumbled

Instructions

  1. In a large bowl, combine watermelon, cucumber, and red onion.
  2. In a small bowl, whisk together lime juice, olive oil, salt, and pepper.
  3. Pour dressing over the watermelon mixture and toss gently to combine.
  4. Sprinkle chopped mint over the salad and toss again lightly.
  5. If using, top with crumbled feta just before serving.
  6. Serve immediately or chill for up to 2 hours before serving.

Notes

  • For best flavor, use chilled watermelon and cucumber.
  • Feta adds a salty contrast but can be omitted for a vegan version.
