  • 1 cup (250 g) whole-milk ricotta cheese
  • 2 tablespoons honey (plus more for drizzling)
  • 1 fresh jalapeño, finely diced (seeds removed for less heat)
  • 1 tablespoon olive oil
  • 1 teaspoon lemon zest (optional for brightness)
  • ½ teaspoon garlic powder
  • Salt and black pepper, to taste
  • Fresh thyme or mint leaves (optional garnish)

Instructions

1. Whip the ricotta:

  • In a food processor or using a hand mixer, blend the ricotta until smooth and creamy (about 1-2 minutes).

2. Infuse with flavor:

  • Add honey, garlic powder, lemon zest (if using), salt, and black pepper. Blend until fully incorporated.

3. Prepare the jalapeño:

  • Heat olive oil in a small pan over medium heat.
  • Add the diced jalapeño and sauté for 1-2 minutes until softened slightly.
  • Let it cool, then fold it into the whipped ricotta mixture (reserve a few pieces for garnish if desired).

4. Serve:

  • Transfer the whipped ricotta to a serving bowl.
  • Drizzle extra honey on top and garnish with reserved jalapeño pieces and fresh thyme or mint.
  • Serve with toasted baguette slices, crackers, or fresh vegetables.
