Ingredients
Scale
1 cup fresh lemon juice (about 4–6 lemons)
1 cup granulated sugar
4 cups cold water
2 large egg whites (or ½ cup aquafaba for vegan option)
Ice cubes
Lemon slices and fresh mint, for garnish
Instructions
In a pitcher, dissolve sugar into lemon juice by stirring until fully combined.
Add cold water and stir to mix, then refrigerate until chilled.
In a clean bowl, beat egg whites (or aquafaba) until soft peaks form.
Pour chilled lemonade into glasses filled with ice, filling about two-thirds full.
Top each glass with generous spoonful of whipped mixture.
Garnish with lemon slices and mint.
Serve immediately, and stir the whipped top into the drink as you sip.
Notes
Use chilled ingredients to keep the whipped layer stable longer.
For a vegan version, use aquafaba (chickpea brine) instead of egg whites.
Adjust sweetness to taste—more sugar for a sweeter drink.
Serve right when assembled for the frothy effect; the top will settle over time.
Add a splash of flavored syrup (strawberry, lavender) for fun variations.
