  • 2 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 1/2 cups granulated sugar
  • 1 cup unsalted butter, softened
  • 4 large egg whites, room temperature
  • 1 teaspoon vanilla extract
  • 1 cup whole milk, room temperature

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour two 8-inch round cake pans and line the bottoms with parchment paper.
  2. In a medium bowl, whisk together flour, baking powder, and salt.
  3. In a large bowl, cream butter and sugar together until light and fluffy, about 3 minutes.
  4. Add egg whites one at a time, beating well after each addition. Mix in vanilla extract.
  5. Alternately add dry ingredients and milk to the batter, beginning and ending with the dry ingredients. Mix until just combined; do not overmix.
  6. Divide batter evenly between prepared pans and smooth the tops.
  7. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  8. Cool cakes in pans for 10 minutes, then transfer to wire racks to cool completely before frosting.
