This decadent White Chocolate Raspberry Tiramisu is a fresh twist on the classic Italian dessert. Layers of creamy mascarpone, tart raspberries, and white chocolate make it an elegant treat perfect for any occasion.

For the Layers:

  • 24 ladyfingers (savoiardi)
  • 1 1/2 cups raspberry juice or raspberry liqueur (for soaking)
  • 2 cups fresh raspberries

For Garnish:

  • 2 oz white chocolate (shaved or grated)
  • Fresh raspberries (optional)
  • Mint leaves (optional)

Instructions

  1. Prepare the Filling:
    • In a mixing bowl, whip the heavy whipping cream until stiff peaks form. Set aside.
    • In another bowl, beat the mascarpone cheese, powdered sugar, and vanilla extract until smooth. Gently fold in the melted white chocolate.
    • Fold the whipped cream into the mascarpone mixture until fully combined.
  2. Layer the Tiramisu:
    • Quickly dip each ladyfinger into the raspberry juice or liqueur, ensuring they are moist but not soggy.
    • Arrange a layer of soaked ladyfingers in the bottom of a 9×9-inch dish or individual serving glasses.
    • Spread half of the mascarpone mixture over the ladyfingers.
    • Sprinkle half of the fresh raspberries evenly over the mascarpone layer.
    • Repeat with another layer of soaked ladyfingers, mascarpone filling, and raspberries.
  3. Chill:
    • Cover and refrigerate for at least 4 hours or overnight to allow the flavors to meld.
  4. Garnish and Serve:
    • Before serving, top with shaved white chocolate and garnish with fresh raspberries and mint leaves if desired.

  • For extra flavor, mix a tablespoon of raspberry jam into the soaking liquid.
