These White Chocolate Strawberry Truffles are creamy, rich, and bursting with strawberry flavor! Made with real strawberries and smooth white chocolate, they’re perfect for holidays, gifts, or a sweet treat anytime.

Ingredients

  • ½ cup (75 g) freeze-dried strawberries, finely crushed
  • 8 oz (225 g) white chocolate, finely chopped
  • ¼ cup (60 ml) heavy cream
  • 2 tablespoons unsalted butter
  • ½ teaspoon vanilla extract
  • 1 pinch salt

For Coating:

  • 4 oz (115 g) white chocolate, melted (for dipping)
  • ¼ cup freeze-dried strawberry powder OR powdered sugar (for rolling)

Instructions

1️⃣ Make the Truffle Mixture

  1. Finely crush freeze-dried strawberries in a food processor or by hand.
  2. In a heatproof bowl, add chopped white chocolate.
  3. In a small saucepan, heat heavy cream and butter over medium heat until warm (don’t boil).
  4. Pour the hot cream over the white chocolate, let sit for 1 minute, then stir until smooth.
  5. Stir in vanilla extract, salt, and crushed strawberries.

2️⃣ Chill & Shape

  1. Cover the mixture and refrigerate for 1-2 hours, until firm.
  2. Scoop 1 tablespoon-sized portions and roll into balls.

3️⃣ Coat the Truffles

  • Dip each truffle in melted white chocolate, then roll in strawberry powder or powdered sugar.
  • Place on a parchment-lined tray and chill until set.

4️⃣ Serve & Enjoy!

  • Store in the fridge for up to 1 week or freeze for up to 2 months.
