Light, fluffy white cupcakes made with simple ingredients — perfect for birthdays, weddings, or any celebration where you want a classic vanilla treat.

  • 1 1/2 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large egg whites, room temperature
  • 1 tsp vanilla extract
  • 1/2 cup whole milk, room temperature
  • Optional: white frosting and sprinkles

Instructions

  1. Preheat oven to 350°F (175°C). Line a 12-cup muffin tin with cupcake liners.
  2. In a medium bowl, whisk together flour, baking powder, and salt.
  3. In a large bowl, cream together butter and sugar until light and fluffy, about 2-3 minutes.
  4. Beat in egg whites one at a time, then add vanilla extract.
  5. Alternate adding the dry ingredients and milk, starting and ending with the dry ingredients. Mix until just combined — do not overmix.
  6. Divide batter evenly among cupcake liners, filling each about 2/3 full.
  7. Bake for 18-20 minutes, or until a toothpick inserted in the center comes out clean.
  8. Let cool completely on a wire rack before frosting.
  9. Frost with your favorite white frosting and decorate as desired.
