Whole baked fish seasoned with fresh herbs, garlic, and lemon for a flavorful and tender main dish that’s both healthy and simple to prepare.

Ingredients

  • 1 whole fish (11.5 kg), such as snapper, sea bass, or trout, cleaned and scaled
  • 2 tbsp olive oil
  • 2 cloves garlic, sliced
  • 1 lemon, sliced
  • 2 sprigs each of rosemary, thyme, and parsley
  • Salt and black pepper to taste
  • Optional: ½ tsp chili flakes or smoked paprika
  • Fresh parsley and lemon wedges for garnish

Instructions

  1. Preheat the oven to 200°C (400°F). Line a baking tray with parchment paper or foil.
  2. Pat the fish dry and make 2–3 diagonal slashes on each side.
  3. Rub the fish with olive oil and season inside and out with salt, pepper, and optional chili flakes or paprika.
  4. Stuff the cavity with garlic slices, lemon slices, and fresh herb sprigs.
  5. Place the fish on the baking tray and bake for 20–25 minutes, or until the flesh is opaque and flakes easily with a fork.
  6. Let the fish rest for 5 minutes, then transfer to a serving platter.
  7. Garnish with chopped parsley and lemon wedges. Serve warm.

Notes

  • Use fresh fish with clear eyes and firm flesh for best results.
  • Scoring the fish allows for even cooking and flavor penetration.
  • You can substitute the herbs based on preference, such as dill or basil.
  • Serve with roasted vegetables, rice, or a fresh green salad.
