Zucchini Fritters are crispy, golden patties made from grated zucchini, herbs, and cheese. They’re quick to make, deliciously savory, and perfect as a side dish, appetizer, or light meal.

Ingredients

  • 2 medium zucchinis, grated
  • 1 teaspoon salt
  • 1/4 cup all-purpose flour
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 2 cloves garlic, minced
  • 2 green onions, sliced
  • 1/4 teaspoon black pepper
  • Olive oil, for frying

Instructions

  1. Grate the zucchinis and place in a colander. Sprinkle with salt and let sit for 10 minutes to draw out moisture.
  2. Using a clean kitchen towel or cheesecloth, squeeze out as much liquid as possible from the zucchini.
  3. In a large bowl, mix the drained zucchini with flour, Parmesan, egg, garlic, green onions, and pepper until well combined.
  4. Heat a thin layer of olive oil in a skillet over medium heat.
  5. Scoop about 2 tablespoons of the mixture per fritter into the pan, flattening slightly. Cook for 2–3 minutes per side or until golden brown and crisp.
  6. Transfer to a paper towel-lined plate to drain excess oil. Repeat with remaining batter.
  7. Serve warm with sour cream or yogurt dip, if desired.

Notes

  • Be sure to drain zucchini thoroughly to avoid soggy fritters.
  • Can be made ahead and reheated in the oven or air fryer.
  • Add chopped herbs like parsley or dill for extra flavor.
