2 medium zucchinis, grated
1 teaspoon salt
1/4 cup all-purpose flour
1/4 cup grated Parmesan cheese
1 large egg
2 cloves garlic, minced
2 green onions, sliced
1/4 teaspoon black pepper
Olive oil, for frying
Instructions
Grate the zucchinis and place in a colander. Sprinkle with salt and let sit for 10 minutes to draw out moisture.
Using a clean kitchen towel or cheesecloth, squeeze out as much liquid as possible from the zucchini.
In a large bowl, mix the drained zucchini with flour, Parmesan, egg, garlic, green onions, and pepper until well combined.
Heat a thin layer of olive oil in a skillet over medium heat.
Scoop about 2 tablespoons of the mixture per fritter into the pan, flattening slightly. Cook for 2–3 minutes per side or until golden brown and crisp.
Transfer to a paper towel-lined plate to drain excess oil. Repeat with remaining batter.
Serve warm with sour cream or yogurt dip, if desired.
Notes
Be sure to drain zucchini thoroughly to avoid soggy fritters.
Can be made ahead and reheated in the oven or air fryer.
Add chopped herbs like parsley or dill for extra flavor.
