2 medium zucchinis, sliced into half-moons
1 tablespoon sesame oil (or vegetable oil)
2 garlic cloves, minced
1/2 teaspoon fresh ginger, grated (optional)
1/4 cup chopped onion or green onion
1 tablespoon soy sauce (or tamari for gluten-free)
1 teaspoon rice vinegar
1 teaspoon sesame seeds (optional)
Pinch of red pepper flakes (optional, for heat)
Salt and pepper, to taste
Heat sesame oil in a large skillet or wok over medium-high heat.
Add garlic, ginger (if using), and onion. Sauté for 1–2 minutes until fragrant.
Add zucchini and cook for 4–6 minutes, stirring frequently, until just tender but still crisp.
Stir in soy sauce, rice vinegar, and red pepper flakes (if using). Toss to coat evenly.
Season with salt and pepper to taste. Cook for another 1–2 minutes until zucchini is coated and slightly caramelized.
Remove from heat, sprinkle with sesame seeds, and serve immediately.
Add mushrooms, bell peppers, or snap peas to bulk it up.
Top with tofu, chicken, or a fried egg for a more filling meal.
Great over steamed rice, quinoa, or noodles.
