These Bagel Breakfast Sliders are the ultimate morning crowd-pleaser! Mini bagels are layered with fluffy scrambled eggs, crispy bacon, melty cheese, and a flavorful spread, then baked to perfection. Perfect for brunch, meal prep, or a grab-and-go breakfast treat.

For the Sliders:

  • 12 mini bagels, sliced in half
  • 6 large eggs
  • 1/4 cup (60 ml) milk
  • Salt and pepper, to taste
  • 8 slices bacon, cooked and halved
  • 12 slices cheddar cheese (or any preferred cheese)
  • 2 tbsp butter, for greasing

For the Spread:

  • 4 oz (115 g) cream cheese, softened
  • 2 tbsp Dijon mustard
  • 1 tbsp honey
  • 1/2 tsp garlic powder

For Topping:

  • 2 tbsp unsalted butter, melted
  • 1 tbsp everything bagel seasoning
  • 1 tsp sesame seeds (optional)


Instructions

  • Preheat Oven: Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish with butter.
  • Prepare Eggs:
    • In a bowl, whisk together the eggs, milk, salt, and pepper.
    • Heat a nonstick skillet over medium heat and scramble the eggs until just set. Remove from heat.
  • Make the Spread: In a small bowl, mix cream cheese, Dijon mustard, honey, and garlic powder until smooth.
  • Assemble Sliders:
    • Spread the cream cheese mixture on the inside of the bagel bottoms. Place the bottoms in the baking dish.
    • Layer scrambled eggs, bacon halves, and a slice of cheddar on each bagel bottom.
    • Add the bagel tops.
  • Top and Bake:
    • Brush the tops of the bagels with melted butter and sprinkle with everything bagel seasoning and sesame seeds (if using).
    • Cover with foil and bake for 10 minutes. Remove the foil and bake an additional 5 minutes, or until the cheese is melted and the tops are slightly golden.
  • Serve: Let cool for a few minutes before serving warm.

Notes

  • Use turkey bacon or sausage patties for a variation.
  • For a vegetarian option, replace the bacon with sautéed spinach or avocado slices.
  • Leftovers can be stored in the fridge for up to 3 days and reheated in the oven.
