The Cheesy Beef Meximelt is a beloved Taco Bell classic featuring seasoned ground beef, gooey melted cheese, and fresh pico de gallo, all wrapped in a warm, soft flour tortilla. While no longer on the menu, you can recreate this delicious treat at home with just a few simple ingredients!

Ingredients

  • 1 pound ground beef
  • 1 packet taco seasoning mix
  • ¾ cup water
  • 6 small flour tortillas (6-inch)
  • 1½ cups shredded Mexican cheese blend (cheddar, Monterey Jack, and pepper jack)
  • 1 cup fresh pico de gallo

For Homemade Pico de Gallo:

 

  • 2 Roma tomatoes, diced
  • ½ small red onion, finely chopped
  • 1 jalapeño, seeded and minced
  • ¼ cup fresh cilantro, chopped
  • 1 tablespoon lime juice
  • Salt, to taste

Instructions

  1. Cook the Ground Beef:

    • In a large skillet, cook the ground beef over medium heat until fully browned, breaking it into small crumbles.
    • Drain excess fat, then add the taco seasoning and water.
    • Simmer for 5 minutes, stirring occasionally, until the mixture thickens.
  2. Prepare the Pico de Gallo: (If making homemade)

    • In a bowl, combine diced tomatoes, chopped onion, minced jalapeño, cilantro, lime juice, and salt. Mix well and set aside.
  3. Warm the Tortillas:

    • Heat tortillas in a dry skillet or wrap them in a damp paper towel and microwave for 20 seconds to make them pliable.
  4. Assemble the Meximelts:

    • Lay a warm tortilla flat.
    • Add a layer of seasoned beef to the center, followed by a generous sprinkle of shredded cheese.
    • Top with a spoonful of pico de gallo.
  5. Melt the Cheese:

    • Roll up the tortilla tightly like a burrito.
    • Wrap each Meximelt in a damp paper towel and microwave for 20-30 seconds, or until the cheese is melted.
  6. Serve:

    • Unwrap and enjoy while hot and cheesy!

  • Cheese Options: For an extra gooey melt, try mixing in mozzarella or using a cheese blend that includes Oaxaca cheese.
