Ingredients

Scale

For the Brownies:

  • 1 cup (2 sticks) unsalted butter, melted
  • 1 ½ cups granulated sugar
  • ¾ cup brown sugar
  • 3 large eggs
  • 2 teaspoons vanilla extract
  • ¾ cup unsweetened cocoa powder
  • 1 cup all-purpose flour
  • ½ teaspoon salt
  • ½ teaspoon baking powder
  • 1 cup dark or semi-sweet chocolate chips
  • 1 cup fresh or frozen cherries, pitted and halved (or ½ cup dried cherries, rehydrated)

Optional Toppings:

  • Extra chocolate chips for sprinkling
  • Powdered sugar for dusting

Instructions

Step 1: Preheat & Prepare the Pan

  1. Preheat oven to 350°F (175°C).
  2. Grease or line a 9×13-inch baking pan with parchment paper.

Step 2: Make the Brownie Batter

  1. In a large mixing bowl, whisk together melted butter, granulated sugar, and brown sugar until smooth.
  2. Add eggs and vanilla extract, whisking until fully combined.
  3. Sift in cocoa powder, flour, salt, and baking powder. Stir gently until just combined—don’t overmix.
  4. Fold in chocolate chips and cherries.

Step 3: Bake the Brownies

  1. Pour the batter into the prepared baking pan and spread evenly.
  2. Sprinkle extra chocolate chips on top if desired.
  3. Bake for 30-35 minutes, or until a toothpick inserted near the center comes out with a few moist crumbs.

Step 4: Cool & Serve

  1. Let the brownies cool in the pan for 15 minutes, then transfer to a wire rack.
  2. Slice and serve warm or at room temperature. Dust with powdered sugar if desired.

Notes

  • Use dark chocolate chips for an extra rich flavor.
  • Swap fresh cherries for maraschino cherries for a sweeter twist.
  • Store brownies in an airtight container for up to 4 days, or freeze for up to 3 months.
