1/2 cup unsalted butter (cubed)
1/3 cup granulated sugar
1 large egg (optional, or substitute with 2 tbsp milk for egg-free version)
1 tsp vanilla extract
7 oz (200g) plain biscuits or cookies (e.g., Digestive, Tea Biscuits, or Graham Crackers), broken into small pieces
1/2 cup chopped nuts (e.g., walnuts, hazelnuts, or almonds)
1/4 cup raisins or dried cranberries (optional)
Powdered sugar (for dusting)
Instructions
Prepare the Mixture:
Melt the Chocolate and Butter:
In a heatproof bowl set over simmering water (double boiler), melt the dark chocolate and butter together until smooth. Remove from heat and let cool slightly.
Add Wet Ingredients:
Whisk the sugar into the melted chocolate mixture until dissolved. Add the egg (or milk) and vanilla extract, mixing well.
Combine Dry Ingredients:
Stir in the broken biscuits, chopped nuts, and dried fruits (if using) until evenly coated with the chocolate mixture.
Shape the Salami:
Form the Log:
Lay a large piece of plastic wrap or parchment paper on the counter. Spoon the mixture onto the center and shape it into a log, about 8-10 inches long. Wrap it tightly, twisting the ends to seal, and roll it gently to smooth the shape.
Chill:
Refrigerate the chocolate salami for at least 2 hours, or until firm.

Dust with Powdered Sugar:
Once chilled, unwrap the log and dust it generously with powdered sugar to mimic the appearance of salami. Slice into 1/2-inch rounds to serve.
