Chorizo Breakfast Tacos are a flavorful and hearty way to start your day. These tacos combine spicy chorizo, fluffy scrambled eggs, and fresh toppings, all wrapped in warm tortillas. Easy to make and packed with bold flavors, they’re perfect for breakfast or brunch!

  • 12 ounces Mexican chorizo sausage, casings removed if necessary
  • 6 large eggs
  • 1/4 cup milk
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 tablespoon butter
  • 8 small corn or flour tortillas
  • 1 cup shredded Monterey Jack or cheddar cheese
  • 1 avocado, diced
  • 1/2 cup salsa or pico de gallo
  • 1/4 cup chopped fresh cilantro
  • Lime wedges, for serving

Instructions

  1. Cook the Chorizo:

    • Heat a large skillet over medium heat. Add the chorizo and cook, breaking it up with a spoon, until browned and fully cooked (about 5-7 minutes).
    • Transfer to a plate lined with paper towels to drain excess fat.
  2. Prepare the Eggs:

    • In a bowl, whisk together the eggs, milk, salt, and pepper until well combined.
    • In the same skillet, melt the butter over medium-low heat.
    • Pour in the egg mixture and cook gently, stirring until the eggs are softly scrambled and just set. Remove from heat.
  3. Warm the Tortillas:

    • Heat tortillas in a dry skillet over medium heat or wrap them in a damp paper towel and microwave for about 20 seconds until soft.
  4. Assemble the Tacos:

    • Divide the scrambled eggs among the tortillas, then top with cooked chorizo.
    • Sprinkle with cheese, add diced avocado, spoon over salsa or pico de gallo, and garnish with chopped cilantro.
    • Serve with lime wedges for an extra citrusy kick.
