Bangers and Mash is a traditional British comfort food featuring juicy sausages (“bangers”) served over creamy mashed potatoes (“mash”) with a rich onion gravy. Perfect for a cozy meal, this dish is easy to make and full of hearty flavors!

For the Bangers (Sausages):

  • 8 pork sausages (Cumberland, Lincolnshire, or any thick sausages)
  • 1 tablespoon vegetable oil (for frying)

For the Mashed Potatoes:

  • 2 lbs (900g) potatoes (Yukon Gold or Russet, peeled and chopped)
  • ½ cup whole milk (warm)
  • 4 tablespoons unsalted butter (melted)
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

For the Onion Gravy:

  • 1 large onion (thinly sliced)
  • 1 tablespoon butter
  • 1 tablespoon flour (to thicken)
  • 1 cup beef broth (or chicken broth)
  • 1 teaspoon Worcestershire sauce
  • ½ teaspoon Dijon mustard (optional, for depth of flavor)
  • Salt & black pepper to taste

Instructions

1. Make the Mashed Potatoes

  1. Boil the potatoes in salted water for 15-20 minutes until fork-tender.
  2. Drain and mash until smooth.
  3. Stir in butter, warm milk, salt, and black pepper. Cover and keep warm.

2. Cook the Sausages

  1. Heat vegetable oil in a pan over medium heat.
  2. Cook the sausages for 10-12 minutes, turning occasionally, until browned and fully cooked.
  3. Remove from the pan and set aside.

3. Make the Onion Gravy

  1. In the same pan, melt butter and sauté onions for 5 minutes until golden brown.
  2. Sprinkle in flour, stir, and cook for 1 minute.
  3. Slowly pour in beef broth, stirring to prevent lumps.
  4. Add Worcestershire sauce, Dijon mustard, salt, and pepper. Simmer for 5 minutes until thickened.

4. Serve & Enjoy!

  1. Place a serving of mashed potatoes on each plate.
  2. Top with sausages and generously drizzle with onion gravy.
  3. Serve with peas, roasted veggies, or crusty bread.

Notes

  • Want a richer gravy? Use a splash of red wine or stout beer.
  • Prefer a smoother mash? Pass the potatoes through a ricer before adding butter.
  • Need a shortcut? Use store-bought gravy and add caramelized onions for flavor.
