Recreate Taco Bell’s classic Mexican Pizza at home with this simple and delicious recipe. Featuring crispy tortillas layered with seasoned ground beef, refried beans, tangy enchilada sauce, and melty cheese, this dish is perfect for a fun family dinner or game night!

  • 1 packet taco seasoning mix
  • ¾ cup water
  • 8 small (6-inch) flour tortillas
  • 1 can (15 ounces) refried beans
  • 1 cup red enchilada sauce
  • 1½ cups shredded Mexican cheese blend
  • 1 Roma tomato, diced
  • ¼ cup sliced green onions (optional)
  • ¼ cup sliced black olives (optional)
  • Vegetable oil, for frying

Instructions

  1. Prepare the Ground Beef:

    • In a skillet over medium heat, cook the ground beef until fully browned. Drain excess fat.
    • Add taco seasoning and water. Simmer for 5 minutes until the mixture thickens. Set aside.
  2. Fry the Tortillas:

    • Heat a thin layer of vegetable oil in a large skillet over medium-high heat.
    • Fry each tortilla for 1-2 minutes per side until golden and crispy.
    • Transfer to a paper towel-lined plate to drain excess oil.
  3. Assemble the Mexican Pizzas:

    • Preheat the oven to 400°F (200°C).
    • Spread a layer of refried beans on 4 of the crispy tortillas.
    • Top the beans with the seasoned ground beef.
    • Place another crispy tortilla on top of each, pressing down gently.
  4. Add Sauce and Toppings:

    • Spread a few tablespoons of enchilada sauce over the top tortilla of each pizza.
    • Sprinkle generously with shredded cheese.
    • Add diced tomatoes, green onions, and sliced black olives if desired.
  5. Bake:

    • Arrange the assembled pizzas on a baking sheet.
    • Bake for 8-10 minutes, or until the cheese is melted and bubbly.
  6. Serve:

    • Slice each Mexican pizza into quarters using a sharp knife or pizza cutter.
    • Serve warm and enjoy!
