  • 1 (6-8 lb / 2.7-3.6 kg) fully cooked spiral-cut ham
  • 1 cup (200 g) brown sugar (light or dark)
  • 1 can (20 oz / 567 g) pineapple slices, with juice reserved
  • ½ cup (120 ml) honey (or maple syrup)
  • 1 tablespoon Dijon mustard (optional for a slight tang)
  • 1 teaspoon ground cloves (optional for added warmth)
  • Fresh rosemary or thyme for garnish (optional)

Instructions

1. Prepare the ham:

  • Place half of the brown sugar in the bottom of the crock pot.
  • Add half of the pineapple slices on top of the sugar layer.

2. Make the glaze:

  • In a small bowl, mix together the reserved pineapple juice, honey, Dijon mustard (if using), and ground cloves.

3. Add the ham:

  • Place the ham on top of the pineapple slices in the slow cooker.
  • Rub the remaining brown sugar over the surface of the ham.
  • Pour the glaze over the ham, ensuring it seeps between the slices.
  • Arrange the remaining pineapple slices on top and around the ham.

4. Cook the ham:

  • Cover and cook on low for 4-6 hours or until the ham is heated through and tender. Baste the ham with the juices every 1-2 hours for extra flavor.

5. Caramelize (optional but recommended):

  • Preheat the oven broiler.
  • Transfer the ham to a baking dish, spoon glaze over the top, and broil for 3-5 minutes until the sugar caramelizes and forms a sticky glaze.

6. Serve:

  • Garnish with fresh herbs if desired, and serve hot with extra glaze drizzled on top.

Notes

  • Use crushed pineapple instead of slices for a more even coating.
  • For a smoky twist, use smoked ham and add a dash of smoked paprika to the glaze.
