These cucumber and cream cheese sandwich rolls are light, refreshing, and perfect for parties, picnics, or afternoon tea. Made with soft bread, creamy cheese, and crisp cucumbers, they offer a delicious balance of flavors and textures.

Ingredients

Scale
  • 8 slices of white or whole wheat sandwich bread (crusts removed)
  • 200 g (7 oz) cream cheese, softened
  • 1 tablespoon fresh dill, finely chopped (or use chives)
  • 1 teaspoon lemon juice
  • 1/2 teaspoon garlic powder (optional)
  • 1 large cucumber, thinly sliced
  • Salt and pepper, to taste

Instructions

1. Prepare the Cream Cheese Spread:

  • In a bowl, mix the softened cream cheese with chopped dill, lemon juice, garlic powder, salt, and pepper.
  • Mix until smooth and well combined.

2. Prepare the Bread:

  • Lay each bread slice on a flat surface and use a rolling pin to flatten them slightly.
  • This makes them easier to roll without cracking.

3. Assemble the Rolls:

  • Spread a thin and even layer of the cream cheese mixture on each slice of bread.
  • Arrange cucumber slices in a single layer on top of the cream cheese.

4. Roll and Slice:

  • Gently roll each bread slice tightly into a log shape.
  • Press lightly to secure the roll.
  • Use a sharp knife to cut each roll into 3-4 pieces, creating bite-sized rolls.

5. Chill and Serve:

  • If possible, refrigerate the rolls for 15-30 minutes before serving to help them hold their shape.
  • Arrange on a serving platter and garnish with extra dill or chives if desired.

Notes

  • You can add a layer of smoked salmon or thinly sliced turkey for extra flavor.
  • For a colorful twist, use a mix of white and whole wheat bread.
