Bruschetta is a simple yet flavorful Italian appetizer made with crispy toasted bread, fresh tomatoes, garlic, basil, and a drizzle of olive oil. This quick and easy recipe is perfect for entertaining, a light snack, or a delicious side dish!

For the Tomato Topping:

  • 4 ripe tomatoes, diced (Roma or cherry tomatoes work best)
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • ¼ cup fresh basil, chopped
  • 1 tbsp balsamic vinegar (optional)
  • ½ tsp salt
  • ¼ tsp black pepper

For the Bread:

  • 1 baguette, sliced into ½-inch rounds
  • 2 tbsp olive oil
  • 1 clove garlic, halved (for rubbing)

Instructions

1. Prepare the Tomato Mixture:

  • In a bowl, combine diced tomatoes, olive oil, minced garlic, basil, balsamic vinegar, salt, and pepper.
  • Stir well and let sit for 5-10 minutes to blend flavors.

2. Toast the Bread:

  • Preheat the oven to 400°F (200°C) or heat a grill pan over medium heat.
  • Brush baguette slices with olive oil and place on a baking sheet.
  • Toast for 4-5 minutes, until golden and crispy. (For extra flavor, grill them!)
  • Immediately rub each slice with a halved garlic clove.

3. Assemble & Serve:

  • Spoon the tomato mixture onto each toasted bread slice.
  • Drizzle with extra olive oil and serve immediately!

Notes

Make It Extra Crunchy: Bake at 350°F for 10 minutes for extra crispness.
Add More Flavor: Sprinkle with Parmesan cheese or drizzle with balsamic glaze.
