Gochujang Noodles are a bold, spicy, and savory Korean-inspired noodle dish made with gochujang chili paste, garlic, and soy sauce. This quick and flavorful recipe is perfect for weeknight dinners or a satisfying lunch.

  • 8 oz noodles (ramen, udon, or soba)
  • 1 tbsp sesame oil
  • 2 cloves garlic, minced
  • 1 tbsp gochujang (Korean red chili paste)
  • 1 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tsp honey or maple syrup
  • 1 tsp grated ginger
  • 2 green onions, chopped
  • 1 tsp toasted sesame seeds (optional)
  • Optional toppings: sliced cucumber, shredded carrots, fried egg

Instructions

  1. Cook noodles according to package instructions. Drain and set aside.
  2. In a large skillet or wok, heat sesame oil over medium heat.
  3. Add garlic and ginger, sauté for 30 seconds until fragrant.
  4. Stir in gochujang, soy sauce, rice vinegar, and honey. Mix well.
  5. Add cooked noodles to the sauce and toss to coat evenly.
  6. Cook for 1-2 minutes until noodles are heated through.
  7. Remove from heat and garnish with green onions and sesame seeds.
  8. Top with optional ingredients like a fried egg or fresh vegetables, if desired.
